FINALES app is starte with a hard-coded version number

The FINALES server is currently started with a hard-coded version number given in [line 42 in cli/server.py](https://github.com/BIG-MAP/FINALES2/blob/a100bb63f92e4674cfd2221b8c6c142ad50cccbc/src/FINALES2/cli/server.py#L42). In the future it should use the version number specified in the setup.cfg to avoid discrepancies.
