Update ClientCommonGen2 dependency version in Podspec

Bumps the minimum required version of ClientCommonGen2 from 1.0 to 2.1.0 in the Swift5 Podspec template to ensure compatibility with newer features or fixes. Version 2.1.0 adds support for exploded arguments.
