Add Cursor IDE MCP configuration guide to docs

Summary

The MCP server docs (docs/mcp-tools.md) currently cover Claude Desktop and Claude Code configuration. We should add setup instructions for Cursor IDE, which is widely used and supports MCP.

What to add

Add a section to docs/mcp-tools.md (or a new docs/mcp-cursor.md) explaining:

1. How to add Velos as an MCP server in Cursor
2. The config file location and format for Cursor
3. A quick demo: what it looks like when you ask Cursor to list processes or show logs
