Add references to component repos from core_architecture docs #60

The docs in core_architecture were written before we had repos for each component. They need to be updated now that we have the following repos.

esgf/esgf-vocab
esgf/esgf-playground-utils
esgf/ESGF-Playground
esgf2-us/stac-transaction-api
esgf2-us/west-consumer
esgf2-us/west-discovery
esgf2-us/event-stream-service
esgf2-us/esgf-validate

At some point, we also might want to add a guide to these in the docs folder.
