Update documentation to reflect the minimum PHP version required.

In JsonMapper/JsonMapper#197 we are dropping the support for PHP versions 7.1, 7.2 and 7.3
The documentation should be updated accordingly as this has impact on the behaviour of the JsonMapperFactory::bestFit method.
