Update version, release date, doi: 2.0.0-beta.

Update doi to use the DOI that refers to the whole package history. We need the new doi (which does not arrive until publishing on Zenodo) to keep the release version information here consistent with the release itself, but we do not get that information until the release. Therefore, my solution is to use the generic whole-package doi while allowing the version number to provide the more specific information.
