Which, if any, work for the Sonoff Dongle-E? and what is the difference between these FWs and the current file from the main SI web site... ncp-uart-hw-v7.4.5.0-zbdonglee-115200.gbl

Each model is in the file name.
As for type:

• zigbee_ncp => coordinator firmware, for use connected to Z2M/ZHA (previously named ncp-uart-hw)
• zigbee_router => router firmware, for use as a dedicated router in a network (see discussion)
• openthread_rcp => for use with OpenThread applications (previously named ot-rcp)

Firmware configs may differ with other builders, you can check the appropriate manifest for more details.
The router firmware have different "extra features" (see above discussion link).
