In https://openeo.org/documentation/1.0/datacubes.html#coordinate-reference-system-as-a-dimension we describe "Coordinate reference system as a data cube dimension". While possible to specify with the dimension type other in cube:dimensions (GET /collections/...), we may want to think about introducing a dimension type crs explicitly made for this case.
