Consider tracking usage of the ai assistant via metrics sent to grafana

We can do this in lightning or apollo - there are impleications of either/both

Things we might track:

sessions over time
messages over time
unique users over time ?
flagged messages

It would be super valuable to know that AI usage is going up, and that investment in the assistant is worthwhile
