@Clyde013 introduced the nvenc encoder options with p5/p6/p7 as options, defaulting to p5. I reversed the order of the encoding options so that it's the best-quality option by default, and then after seeing https://gist.github.com/nico-lab/a194592124e7f505e1028a4cc88b75cc, I elected to make p5 the best-quality option and introduce the other faster encoders (p4-p1) in favour of p6/p7.
I was then reminded that we told people to use p7 previously:
You should set your preset in OBS to NVENC with P7 otherwise you may get lag.
but the reasoning given ("you may get lag") doesn't make sense with P7, which is the slowest setting. Let's investigate and figure out if it's worth expanding the range/setting the default back to P7.
