Add Test for Funding Target Slightly Exceeded

Description

Exceeding the funding target by a small amount should follow current rules (e.g., pro-rata acceptance or full acceptance depending on design). Add a regression test to clarify and lock in behavior.

Requirements

• In the same module as Issue feat: Per-Vault Admin Override - Enable Independent Vault Governance #150, add a test that:
  • Sets deposits such that total_deposits slightly exceeds funding_target
  • Asserts resulting state and balances match existing expectations

Definition of Done

• Over-target funding behavior is explicitly tested
• No non-test code changes
• All tests remain green

I can take #181 in StellarYield/StellarYield-Contracts and add a pure regression test only (no production code changes) in the same test module used for Issue #150 to lock in the current “slightly over funding target” behavior. The test will arrange deposits so total_deposits exceeds funding_target by a small margin, then assert the resulting contract state and participant balances match the existing rules (e.g., pro‑rata acceptance vs full acceptance—whichever the current implementation already enforces). Definition-of-done wise, this will make the over-target behavior explicit and stable, and I’ll ensure the full test suite remains green.
