re-running seed.ts (without --override), removes existing records

I've added one pdf file to sample-docs, ran the seed script - it added that document to catalog and chunks tables (`A.pdf`)
I've added another pdf to sample-docs, ran the seed script again (without --override) - it deleted the previous records and added new records (`B.pdf`)

Hence, `catalog_search` returns only `B.pdf`
