Metadata extraction overrides `Version` information even if disabled

In the current implementation of extract_metadata, the assignment of version info andontology_iri happens even if we set its extraction to false in ontology_submission.yml.

To questions then:

• Can we easily change this so that the versionInfo extraction is really dependant of the parameter?
• if not, can we document this or find a way that the code tell us this property is not concerned by this parameter ?
• Generalize to the couple of properties concerned.
