Add docker compose profile for autolaunch

Add a --profile autolaunch to launch things. Change the default profile to simply bring up containers with no launch.

Isaac should have --profile edit to simply edit environments

Should also have a docker compose up --profile bws to auto build ROS2 packages

Should not try to hijack docker compose launch system for container-specific launch args.
We should keep docker compose up to be only if you want to auto launch everything.
If people need to customize, then they can docker compose up -d and manually go into each container to launch what they want to launch.
