Shouldn't this only happen if the back ticks are used with spaces between words (like this) if it's only one word (like_this) it shouldn't break like that right? And this makes reading much harder.

Yeah, we're aware of this wonkiness. Sadly using the expected word break behavior causes some tables to become very wide (which was also an issue in the legacy docs). We're experimenting with this and will likely have a fix soon.
