PR to update README of anemoi-docs repo as step towards having a centralised Anemoi repo.

@aaron-hopkinson if you could review this when you have a minute, @VeraChristina already helped with adding the changes needed for the rename. Once this's done I will add this repo to the reusable workflow so we get all the actions broadcasted including the one for checking the ats labelling
