Support creating Elasticsearch indices

We need to add functionality to create Elasticsearch indices directly through the MCP server.
This would allow users to create new indices with proper mappings directly from their MCP client.

We've gotten a couple requests to add tools to this server that can create, edit or delete data in Elasticsearch. We're evaluating that as a possible option but are considering it carefully before providing an implementation, to ensure we're preventing accidental loss of data.
