docs: Set up system Monitoring

Create a guide on what monitoring options are available:

• Access Logs
• Prometheus integration (like in Envoy Gateway)

At minimum this should help a user understand how to gather metrics and how to interpret the output.

It requires to be a part of envoy org which I don't think we can literally give anyone. Could you just go ahead and take a shot? Having said that, the tech is not ready to work on this issue especially by someone without any context or deep understanding of the internal. Can you take a look at other issues?

Thanks for the feedback and for clarifying the situation. I understand that issue 245 requires a deep familiarity with the internals, and I appreciate your honesty. I’m eager to contribute, so if you could recommend a few issues that might be a better fit for me at this stage or point me toward any documentation or onboarding materials that would help me ramp up on the internals I’d be grateful. I’ll focus on building my understanding and working on those issues, and hopefully, in the near future, I can tackle more complex items like this.
