Is there any way to emulate a MODBUS Server too using modbuspp?

So I can use my own PC (or 2 PCs + Ethernet comm) to run the modbus datagram transfer?

I would recommend you google a modbus simulator. Currently the lib does not support server emulation as this is a client side library, nor I have time to actively maintain it.
