Consider switching to Jackson or a similar library instead of template strings

The original assumption was to avoid large dependencies to keep the resulting JAR small. However, this is getting tedious and the "Formatter template strings" are getting really clunky and inflexible.

Look into Jackson (or something similar?) to cover at least JSON and CSV with more flexibility.
