Create a Project Roadmap

Let's plan to create a markdown document (that will live in this repo) that gives an overview of our overall project plan. We can treat this as a living document and update it as necessary based on our meetings and informal chats.

Some items I'd like to see be incorporated:

• Feature list (both completed and proposed)
• Proposed Unity workflows
• Demos with setup/usage documentation
• Stretch Goals
• Whatever you think should be added 😄

If you (@EggAllocationService) want to start a new document like this, we can all collaborate on filling it out.

I setup a wiki page - I think that's a little more ergonomic for something like this instead of a committed file.

We should also look into making full use of Github's Projects feature, that sounds perfect for this.

I agree, I see you've started a GH Project for UnityMapper -- let's definitely try to follow that workflow!
