[FEAT] Update deployment / utils scripts to reflect latest `zksync-ethers`

With the latest zksync-ethers improvements we can make use of the same deployment scripts as L1.

• Update deploy scripts to reflect latest changes
• Add template for showcasing L1 / L2 interchangeableness
