add zod and fix types

Fixes Zod dependency issue and install required types for weather-typescript-server

Motivation and Context

Solves #22

FYI, if you install zod 4 server stops without any message. install zod 3 as this PR did

The MCP TypeScript SDK is now v1.24.3 and it supports Zod v3.25+ and v4, so I'm going to close this PR. If you think the examples need further updates, would you mind opening a new PR?
