Documentation of proper steps for configuring and deploying osixia/docker-openldap

With it having both multimaster support and TLS, I'm hopeful to be able to use osixia/docker-openldap in production. It is not clear however, how best to do that. For example, there's this example:

docker run --env LDAP_ORGANISATION="My Company" --env LDAP_DOMAIN="my-company.com" \
--env LDAP_ADMIN_PASSWORD="JonSn0w" --detach osixia/openldap:1.1.7

That's great for experimenting, but certainly not best practice for use in production - passing cleartext admin passwords on commandlines is a bad idea.

I have not been able to find clear instructions on how to provide the container a FILE with all the needed configuration settings at startup time.

Are there instructions / recommendations on how to best use osixia/docker-openldap? Failing that, if anyone can provide specifics on the steps, I'll be happy to write something up.
