An example for creating labels form a COCO annotation?

I'm trying to fine tune a network using this package for image segmentation.
Since COCO is a standard format for these kind of task, could you include a guide on how to create the labels expected by the segmentation_models package from a COCO annotation json file?

In the meantime I'd appreciate any resource that can help me figure out how to do so
