Configure trackpad defaults

Looks like the trackpad settings don't use defaults the way most other settings do. Tried diffing the default values for a new account against various changes, but no luck. See additional comments in defaults.sh.

To do:

• Enable tap to click
• Enable three finger drag (note: Macs with Force Touch trackpad use different settings)
