GHCR Containers are not used in compose file #454

Describe the bug
Launching the compose stack using commands used in README fails since the containers point to stac-utils org in Dockerhub not GHCR.
To Reproduce
Steps to reproduce the behavior:
- Clone the repository
- Attempt to launch the docker compose stack using provided instructions.
Expected behavior
Stack launches with x2 containers and appears as below.

Additional context
GHCR login is also required. Ideally we use the available container name in ghcr in the compose file and pull that if available / logged in for a quick launch. Or at least provide explanation for the required login.
