Cool project. One additional didactic way to learn about signal processing is through VCV Rack, an open source project (https://vcvrack.com/Rack). Omri Cohen posted several tutorials in Youtube. I designed distortion, flanger and echo effects using a Gibson Les Paul and a Strato with that and a small Behringer UMC204HD. The system could switch between the sounds pressing custom shortcuts. I added a beat and a synth bass. It was a fun project. I think another sampler or recorder that adds effects live is the strudel programming language project (strudel.cc/), but I haven't tried it out yet.
