Manifest: tags taxonomy is flat — breaks at scale beyond a few hundred providers

tags: string[] stores arbitrary strings with no hierarchy. Trigram search degrades as the registry grows: crypto, crypto-prices, cryptocurrency are unrelated tags with no parent-category rollup.

Proposed fix: Add optional categories: string[] with /-delimited paths from a published taxonomy (e.g. data/price/crypto). Registries index path segments independently.
