First, I know how laborious it can be to maintain a project, so thank you for coming back to develop Nitter. You are doing everyone a great service!
Piped and Invidious do not work in their current state
Libreddit and Teddit no longer exist, superseded by Redlib
But I was thinking that maybe it's better to remove the section entirely: instances are often down, and it's "time consuming" to go every time to change the settings with the instance that seems to work best at that time.
It's probably best to leave everything in the hands of Libredirect, which does a faster and more extensive job (indeed, it supports many more front-ends).
My two cents!

I know someone proposed a similar thing here: unixfox/nitter-fork#6 but that was to replace libreddit with redlib.
I think it's a good idea to let the default domains for youtube and reddit. Since any alternative frontend for those services are very unstable.
Or the alternative idea is to redirect to farside (https://github.com/benbusby/farside) like https://farside.link/piped. This way, the user will always use a working instance.
