Improvements to update_version script and publish Github action

What does this PR do?

This PR addresses two points related to the release process:

• Makes it so update_version.sh also checks the release's file contents for each module of the SDK. This was only previously done for the core and navigation modules.
• Attempts to fix an issue with the publish action that caused the call to yarn config to modify the project's .yarnrc.yml
