What does this PR do? What is the motivation?

Updated the guidance around setting up fluentbit logging with ECS to properly correlate with the ECS explorer.

  • removes the need to manually set the tag aws_account:<ACCOUNT_ID>
  • now requires that logs are set with dd_source:ecs
