Adds the "Top merchants" option to the Insights section's dropdown on the Home page again.

Because the pie charts were crashing on release builds: #98331

Tests

1. Log in to an account that is an admin/auditor/approver of at least one workspace.
2. Go to Home.
3. Scroll to the section that shows charts.
4. Verify there is Top merchants option in the dropdown when clicking the section title.
5. Select Top merchants.
6. Verify it renders a pie chart when there are some expenses in the previous calendar month (empty state otherwise).

Help site review — no changes required

I reviewed this PR against the help site articles in App/docs/articles and did not create a docs PR, because the change is already fully documented.

What this PR does: re-adds the Top merchants option to the Insights/charts dropdown on Home (useHomeInsightConfigs.ts). It was previously present (#96625), temporarily removed (#98354) while a crash was fixed, and this PR restores it.

Why no docs update is needed:

• Top Merchants already has a dedicated article: View the Top Merchants report.
• It's already listed and explained in How to Use Insights in Expensify (including that its default view is a Pie chart).
• The existing docs already use the exact UI label Top merchants (only the first word capitalized), consistent with this PR.
• The Expensify Home Overview documents the Home charts area generically as the Spend over time section and does not enumerate the individual dropdown options (Top spenders / Top categories / Top merchants). That is a pre-existing editorial choice unchanged by this PR — it doesn't list the other two options either, so restoring Top merchants introduces no new documentation gap.

This PR restores previously-shipped, already-documented behavior and introduces no new user-facing feature, terminology, or label, so the help site is already accurate. No draft docs PR was created since there's nothing to change.

UI verification note

I attempted to confirm the exact dropdown labels on the live Home page, but the test account has no workspaces (the charts section only renders for an admin/auditor/approver of a paid workspace with expenses across ≥2 months), so the section didn't appear. The conclusion above relies on the existing docs already using the correct label and this being a restoration of prior documented behavior rather than a new feature.
