Summary: Bump the keeper-gateway chart to 0.2.3 / appVersion 1.8.1 so a default install tracks the released Gateway 1.8.1. Also de-stales the README structured-logging note.
Context: Gateway 1.8.1 is released (binary + image published); the chart still defaulted to 1.8.0 via appVersion.
