Security patch release: points at keeper/injector-{webhook,sidecar}:0.11.1, which
bump google.golang.org/grpc to 1.81.1 (critical) and go.opentelemetry.io/otel to
1.44.0 (high). No chart template changes.

Bumps the keeper-injector chart to 0.11.1 (version + appVersion) so deployments pull the patched images

Context
Patch release following the v0.11.0 audit-fix release; addresses the open Dependabot security alerts (now fixed on main).
