This PR adds additional documentation to RewardsCoordinator.md to describe the changes introduces by Rewards v2.1 (#1011).

Modifications:

Introduction of _operatorSetSplitBips to the "Important state variables" section
New definitions of "operator set" and "operator set key" in the "Helpful definitions" section
Addition of two new functions:
- createOperatorDirectedOperatorSetRewardsSubmission
- setOperatorSetSplit
Updates to other functions since docs were last written (e.g. addition of checkCanCall modifier)
Various formatting consistency fixes
