docs: fold the mock-content fixes into the 3.0 changelog entry - #126

The v3.0 tag is being moved onto the commit that contains them, so they ship as part of 3.0 rather than after it. Leaving them under Unreleased would have made the changelog disagree with what the tag actually points at. Co-Authored-By: Claude Opus 5 <noreply@anthropic.com>
