Add compose.yml, rename docker files, add build env file

reimplement the mystical docker compose file for better container management and easier build and install, until we get yolks sorted out.

One thing to note: I think this setup exposes the Postgres DB's port on the network as well, so makesure not to expose that port when you forward this for a server deployment...

also renames docker files to fit convention.
