docs: add nufftax + FINUFFT citation guidance#503

Adds a `## NUFFTax` section to the docs citations page so users running interferometer fits on the JAX path know to cite `nufftax` (the new pure-JAX NUFFT dependency, https://github.com/GragasLab/nufftax) and the upstream FINUFFT paper whose algorithm it implements. Follows the precedent set by the existing `## Jax-Zero-Contour` section: the citation guidance lives only in `docs/general/citations.md`, not in `files/citations.{bib,tex,md}`.
