[codex] Refresh README for v0.7.0 screenshots

Summary

• refresh README opening section for the v0.7.0 release
• add a short What's New section covering live scans, pause/resume, folder exclusions, redaction, and cleanup review lanes
• replace the README overview screenshot and add a small redacted screenshot gallery captured from the v0.7.0 macOS build

Validation

• rebuilt and launched StorageScope with STORAGESCOPE_BUILD_CONFIGURATION=release STORAGESCOPE_DIST_DIR=/tmp/storagescope-readme-v070 bash ./script/build_and_run.sh --fixture-scan --duplicates --view cleanupReview --select-verified-cleanup
• verified /tmp/storagescope-readme-v070/StorageScope.app reports CFBundleShortVersionString 0.7.0
• used Computer Use to enable Settings > Privacy > Redact file & folder names before screenshots
• confirmed the UI showed redacted placeholders such as Folder 1, File 7.bin, and redacted paths before capture
• git diff --check origin/main...HEAD
