docs: update API support matrix in README

Updates the API Support Matrix in README.md to document the newly implemented endpoints:

• /relay/recovery (POST): Stuck relay recovery cycle (v5.1.0+ / $FK)
• /relay/reset (POST): Relay contact-life health estimation reset (v5.1.0+ / $FH)
• /cabletemp (GET, POST): Cable temperature monitor configuration and status (v5.1.0+)
