docs: fact check README references

Summary

• update the README documentation links and PDF indexing example to point to files that exist in the repository
• replace the broken WebSocket reference with a link to the workflow API guide
• remove references to non-existent example files from docs/workflow-api.md so the guidance matches the current repo contents
