Fix README demo SVGs for dark mode

Include <style> tag in SVGs containing 'prefers-color-scheme' media
query. Also include filter in <defs> tag, which inverts luminance, but
keeps hue and saturation/chroma approximately constant when dark mode is
enabled. Modify 'pandoc-svg-create-demo.js' to insert these components
automatically when a demo SVG is generated.
