What does this PR do?

Updates the tested version of the Kube-stack Helm Chart used in the K8s Onboarding configurations to v0.6.2.

Follow-up PR in Kibana: elastic/kibana#227580

Why is it important?

Keep the Onboardings up-to-date and benefit from the latest features and fixes.

@rogercoll please run mage integration:buildKubernetesTestData and push also the updated files under this PR. We are bringing all k8s deployments in the repo now to avoid flaky CI due to external github repo outages 🙂

@rogercoll I see k8s tests failures, in particular TestOtelKubeStackHelm/mOTel_helm_kube-stack_operator_standalone_agent_kubernetes_privileged this one fails because the test expects 4 otc-container containers but only 3 are provisioned with the latest version?!

It should still deploy 4, I will take a look asap 🤔

It seems the OpenTelemetry Collector CRD used when the autoscaler field is defined, it does not contain the mandatory replicas field:

## Summary

This PR bumps the pinned version of the OpenTelemetry kube-stack Helm
Chart used in the K8s Otel onboardings. The reason behind is to keep the
Onboardings up-to-date and benefit from the latest features and fixes.

Updated in the elastic-agent integration tests:
elastic/elastic-agent#8917
