👋 @wordpress-mobile/wordpress-mobile-developers I used this PR to test the new Xcode 26.1.1 image. Things look OK other than some failing UI Tests that I didn't spot quick fixes for.

I'll be happy to close this PR or leave it open for you to take it the rest of the way. This most important thing to note is that the openssl gem is a requirement to work around the Ruby + SSL issues. Thanks!
